Happy Wednesday my foodies!
Thank you again for all your sweet, kind and honest thoughts about yesterday’s post. Part 1 and Part 2 of my story with disordered eating were hard to share, but so worth it. I KNOW I am not the only person out there who thought living life on and off a diet was just the way it had to be. I am PUMPED that so many of you are starting to see that diets suck and eating healthy doesn’t have to be starving your body nor does it mean you can never enjoy your favorite foods! Y’all are the best and I am so happy to have readers like you.
Onto the eats!
This past weekend was amazing. My sister surprised me with a spontaneous trip to visit when my brother in law had a conference here in Tampa (we live in St Pete). We had SO much fun, especially when we did a craft beer experience with all of our friends on Saturday. After all the craft beer and juicy cheeseburger and fries on Saturday, I did not have much of an appetite on Sunday. Intuitive eating means some days you are hungrier than others, and Sunday was just one of those days where things naturally ‘balanced’ out after an indulgent day before. I was NOT restricting intake, I just ate what my body was craving. Simple meals, lots of probiotics, lots of vegetables and lots of water.
Since Sunday was so much lighter than my usual eating, I woke up pretty hungry on Monday. So I listened.
I started the day off with my usual quart of water with lemon, shot of diluted apple cider vinegar and followed this with some Jacked Up Java.
Shortly after this, I had a variation of my overnight zoats, flavored with carrot cake in mind! I added a little less zucchini, some shredded carrots, maple syrup and spices (cinnamon, ginger, nutmeg). Topped with peanut butter (duh), coconut flakes and graham cracker.
Morning snackage include prosciutto wrapped mozzarella and pineapple.
Lunch was a massaged kale salad (massaged a large batch in EVOO, lemon juice and sea salt) with cucumbers and a feta yogurt chicken salad. Topped with balsamic vinegar and olive tempenade. I also had 2 almond joy energy bites.
My afternoon snack was two handfuls of the pictured trail mix. It has teeny tiny miniature PB cups in it. So cute. So delicious.
Dinner was leftovers from Sunday night. Curry chicken (pre-marinated from TJ’s, was wayyyy too salty though I don’t think I will buy that particular marinade again), coconut lime rice (cook rice and then add coconut milk, lime juice and lime zest at the end) and sautéed broccoli, peppers, onions, broccoli slaw and radishes. All the veggies.
Andddddd I got hungry about an hour after dinner (around 7:30pm) so I had my current fave nighttime snack. Anyone else get in major food ruts and eat the same thing all the time? I. Am. So. Guilty. I get obsessed and eat it until I cannot anymore! This is happening right now with overnight zoats, my nighttime snack, and chicken salad. Whoops 🙂
My nighttime snack was PB2 mixed with kefir, bloobs, Puffins cinnamon cereal and lotsa cinnamon. Oh and I threw a couple of those teeny tiny PB cups in there for fun-zies.
No exercise this day because I am letting my back heal after possibly straining a muscle while lifting recently. I am going to the PT later today and should know soon how long I have to rest. Man, I miss the endorphin rush!
