Happy hump day my foodies! Guess what?! Today is my birthday!
I am 27 years old. Officially in my late 20’s. Feels so weird typing that. But to be honest with you…every year I get older I love life even more 🙂
On to the eats!
I started last Wednesday with a pint of warm lemon water and a shot of diluted apple cider vinegar. It was leg day, so after that I had a cup of coffee blended with 1/2 scoop salted caramel BCAA’s, 1/2 teaspoon maca, 1 T coconut cream and a splash of almond milk. Plus a banana.
When I got back from the gym I had a smoothie bowl, per usual! This one was made with 3/4 banana, spinach, 1/2 cup blueberries, 1 scoop grass fed whey chocolate protein powder, 2 T PB2 (this was all frozen in a baggie the night before) with almond milk. Topped with the usual cinnamon Puffins, cacao nibs and peanut butter. Can you believe that’s just a tablespoon of peanut buttahhhh? Love the extra drippy kind!
I had a long meeting all morning at work, so when it was over by 11am I was really hungry but I needed to go run an errand during my lunch hour so I ate a snack to hold me over. Energy bites and deli meat, did the trick!
Once I completed running errands I ate my lunch. Today’s lunch was from yesterday’s post- Hungry Hobby’s walnut pesto turkey burgers with spinach, cherry tomatoes, roasted bell pepper and pickled onions (both prepped as part of my food prep on Sunday), roasted sweet potato wedges and lemon. I also added some horseradish hummus after this pic, I found it at Trader Joe’s (while running errands) and freaked out because I love wasabi/horseradish spice! This was delicious, but I was not as hungry as I was expecting to be, so I hate half of what is pictured, and ate the other half about an hour and half later (around 2pm). I didn’t eat all the veggies because my stomach was feeling a little off.
I got hungry again around 4pm, so I ate my favorite afternoon snack as of lately, a yogurt bowl! Made with Fage plain Greek yogurt, strawberries, cacao nibs and again another new TJ’s find- dark chocolate covered cacao nibs. I literally almost screamed when I saw them. And when I got in the car I immediately ripped them open and had a bite (so yea, I ate that earlier too!) SO GOOD. SO EXCITED ABOUT THESE.
Dinner was ground bison made into taco meat by adding a splash of water with cumin, smoked paprika, chili, and chipotle spices. I ate this in a flour tortilla (uncooked from Costco, you just cook them on stovetop before eating) with the last of my spicy pickled vegetables from TJ’s, sauteed cabbage, jalapeno and bell peppers (goodness the jalapeno was so spicy I could barely handle it- why do they range so much in their spice level!), a dollop of plain Greek yogurt (great substitute to sour cream), lime juice and sriracha.
A delicious day of eats, for sure!
