Hello my foodies! I am writing this from Puerto Rico, we are here for our friend’s wedding and mini vacation! As soon as I submit this, I am going to do a quick circuit workout and then head to the beach for the day 🙂
Today’s eats are from this past Friday…
Per usual, I started the day off with a pint of water with lemon and a shot of diluted apple cider vinegar. Followed by a banana for pre-workout fuel and a coffee drink of blended dark roast with 1 T coconut cream, 1/4 cup almond milk, 1/2 scoop Slap Nutrition salted caramel BCAA’s and 1/2 teaspoon maca blend.
Lunch was super random and was all about using up ingredients that we needed to eat in the house! Sauteed green beans and kale, topped with tomato, goat cheese, wild albacore tuna and balsamic vinegar. I had some TJ’s roasted plantain chips on the side, as well as a couple energy bites.
I didn’t follow a recipe for these energy bites, but here are my cinnamon maca energy bites and mocha energy bites stuffed with dark chocolate covered coffee beans if you are looking for a recipe!
In the afternoon, I snacked on a brown rice cake topped with plain Greek yogurt mixed with PB2 and strawberries.
When I got home, my sister and brother in law had come to town! I discussed the fun weekend we had here. For dinner, we went to an adorable farm to table pizzeria in Safety Harbor, FL. First, we snacked on appetizer of flatbread with dips and a summer zucchini salad. And then we split two pizzas, I can’t remember the toppings but it was amazing! I also had a couple glasses of wine that night, and a bite (about half a portion) of my paleo fudge. My sister and bro in law absolutely loved the fudge, so happy they liked it!
