I’m back! Did you enjoy Nick participating in WIAW last week? I sure did!
Today’s round of eats are from this past Sunday. It was a very chill weekend. I was a complete hermit and split my time between working and relaxing. I got up around 6 am and drank about a pint of water with lemon and had a shot of diluted apple cider vinegar. After that, I enjoyed my Jacked Up Java with no MCT oil today. Idk why, just wasn’t in the mood for it. Everything else was the same!
Breakfast was out of the norm for me, I actually wanted something savory. So of course, I did sweet AND savory. A fried egg nestled in sauteed zucchini, kale, ground chicken and cherry tomatoes. Flavored with chili, chiptole and smoked paprika spices, lime juice and hot sauce, naturally. I also had french toast that I made with TJ’s whole wheat Tuscan bread, egg whites, maca, cinnamon and vanilla extract. Topped with maybe 1/2 T peanut butter, a dash of cinnamon and maple syrup and cacao nibs. After I took this pic I added a few frozen wild blueberries on top.
Since Sunday’s are my productive day, I had an extra dose of caffeine in the form of my favorite peppermint mocha drink 😉 Made with 1/2 cup roasted coffee, almond milk, peppermint oil, cacao powder and Stevia. Oh, and then I had a homemade pomegranate kombucha. Sorry I forgot to take pictures of all my drinks this day, whoops!
For lunch, I had a huge salad made with spinach and butter leaf lettuce, roasted potatoes, roasted carrots and roasted sweet peppers (thanks for the idea, Mom!), chicken (leftover from roasting a whole organic chicken the night before), cherry tomatoes and a homemade dijon dressing. Plus a little extra ACV added. After I had lunch, I was taking pictures for my post on Friday, so I definitely had a few bites of my fudge. IT IS SO GOOD. I know I have a good recipe when Nick and I cannot stop eating it.
Lunch held me over until dinnertime today. For dinner, I made Giada’s pretzel covered chicken tenders (made with organic chicken and sprouted grain pretzels) with organic ketchup with curry added. I thought it was going to be great, but it was just meh. I love the idea though, so I want to keep playing around with the recipe. On the side I had spicy sweet potato wedges, roasted asparagus and roasted kale.
I still needed a little more after dinner, so I had about a 1/4-1/3 of a roasted sweet potato with PB2, maybe around 1/2 T peanut butter, a small chunk of 85% dark chocolate and cacao nibs. I sat and thought about this one for a little while. I felt like by “dietitian” standards I had already had enough potatoes and not enough fruit today. But intuitively, I was craving my favorite dessert and a sweet potato just sounded so divine. Sometimes eating mindfully means eating potatoes three times in one day. I love potatoes. Don’t fear the potatoes. Maybe my body needed extra potassium or beta carotene…so I listened and ya know what? It hit the spot.
And that’s it for Sunday’s delicious day of eats! It was a rest day, so I spent the day cleaning the house and took Porter on an hour and half walk on a gorgeous bridge here in Tampa Bay. This time of the year is when you fall in love with living in Florida all over again. It may be getting (too) hot, but I love that life around here centers on being outside and out on the water. Beach days are my favorite!
Quick update on my healthy living plan for this past two weeks. I ended up resting on Friday, because that’s what I felt I needed. I have consistently worked out for the past 1-2 years and it has become such a habit that I crave and love my workouts so much. With that being said, I always try to listen and and when I have days like Friday that I am dreading working out, I rest. I totally get that when you are new to starting an exercise routine every time you exercise it is dreaded, but don’t give up! Habits take time to form, and exercise is even more difficult than healthy eating to form the habit of doing it consistently. I think sometimes (especially on social media) its almost seems like ‘fit fanatics’ are promoting over-exercise. If you are too fatigued, cramping, extreme soreness or pain and you are consistently working out but dreading it- that might be a sign that you are overdoing it. I still worked out five times that week and took Porter on hour-long walks almost everyday so skipping that workout was probably exactly what my body needed.
Since I worked out twice this past Monday (only because I have a class I absolutely LOVE on Monday’s, not because I needed to exercise twice), I ended up just doing a short run with Porter instead of going to a power yoga class on Tuesday. Not sure how much I’ll be able to exercise when in Memphis, and that’s okay too!
