What I Ate Wednesday is a popular link-up between food bloggers, started by Jenn at Peas and Crayons, to showcase what they typically eat in a day.
Time for another round of eats. This week we have a special guest appearance… (drumroll)…my amazing husband Nick!
Ok, ok, I wrote that last line. But, it’s (mostly) true. When Victoria asked me to do a WIAW post, I was a bit hesitant. To be completely honest, I’m not a big fan of people taking pictures of their food, especially in a public setting. Therefore, having to take photos of every single thing I ate throughout the day sounded less than appealing. Plus, I’m not a very good photographer. Oh well, the things we do for love. Here goes nothing…
This WIAW post is from last Thursday. As most of you know, Victoria and I typically go to the gym on Monday, Wednesday, and Friday so today was just a normal workday that began with a basic cup of coffee with organic half and half plus about 1/2 teaspoon of Sugar in the Raw. I’ve come a long way in how I enjoy my coffee, but I’m still not (and probably never will be) someone who enjoys it black.
Victoria has been on my case for years about not eating breakfast. I’ve finally developed a good habit of eating breakfast every day, but unlike my beautiful wife, I need some time in the morning to “warm up” before eating. Typically, this means I eat breakfast when I get to work. Today was no different. I enjoyed my daily ration of steel cut oats from the large batch that Victoria prepared for me on Sunday night. I’m a simple man, so this was topped with peanut butter and a 1/2 teaspoon of Sugar in the Raw. Oh yeah, I also had another cup of coffee once I got to work. We recently got this sweet, industrial grade, Keurig-like machine at our office that makes delicious coffee, so I’ve had a hard time resisting that 2nd cup.
As lunchtime approached, I quickly ate my salad (again, prepared by my lovely wife the night before) at my desk as an “appetizer” because it was my turn to go home and play with Porter. Today’s salad consisted of spinach, chick peas, cucumbers, and tomatoes topped with Panera balsamic vinaigrette dressing. Victoria would obviously prefer me to make my own dressing but I’m just too lazy. Sorry babe, at least it’s not ranch. Sometimes I eat my full lunch at our picnic table outside, but today I wanted to make things easy and just eat my sandwich with the pup.
Speaking of sandwich, I eat them almost every day. Talk about a creature of habit. I think my love of sandwiches started when I was a sub “craftsmen” at Jersey Mike’s during college. I’ve been known to make a mean sandwich, but today I stuck with the simple theme. Boars Head brand Golden Classic sliced chicken (low sodium), pepper jack cheese, mayo, and Dijon mustard on whole wheat, Publix bakery bread. I enjoyed this at our backyard picnic table while Porter played.
I returned to work and finished off lunch with a quick dessert… a Victoria special energy bite. By mid-afternoon I needed a snack. Today, I went with a Greek yogurt. I’m not yet to the point where I can enjoy a plain Greek yogurt, so I opted for the Cherry Pomegranate flavor by Publix. I know I know, it’s loaded with extra sugar. One of these days I’ll cut that out of my diet, but today was not the day.
When I got home, I took Porter on a long walk and worked up an appetite again. My pre-dinner snack was pretty random and consisted of a Cara Cara orange and a handful (ok, 2 handfuls) of Whole Foods brand fruit loops. If you’ve never had a Cara Cara orange, do yourself a favor and buy some. They are fantastic. But, they are a royal pain to peel. I actually took my time peeling this one in hopes of getting a good picture and I still butchered it. Oh well, it still taste delicious.
Dinner was prepared by, you guessed it, Victoria. It was leftover steak, grilled peppers and onions, and pepper jack cheese wrapped in a brown rice wrap. I’d be lying to you if I said I liked brown rice wraps. Good ol’ wheat wraps are my hands-down favorite, but apparently most have trans-fat in them so I’m not allowed to buy those. Also worth noting, I accidentally forgot I was supposed to be taking pictures of my food, so I may have taken a bite or two before this photo. Whoops.
After dinner I needed a snack. Again, I’m a pretty simple guy so I just went with more cereal. This time I went all out and used a bowl with 2% organic milk. It was totally worth the extra effort.
And that’s it. Hopefully I didn’t bore you to death with my simple meals and poor quality photography. If so, don’t fret because Victoria will be back for next week’s installment of What I Ate Wednesday. Until then…
