Happy Wednesday morning my foodies! I am especially happy today because it is my “Friday”. We leave tomorrow for Raleigh for a wedding weekend! But let’s get to why you are here today…to the eats!
This is from Monday this week. I started the day as usual, drinking lots of water and a shot of diluted apple cider vinegar. Followed with Jacked Up Java, this time only using 1/2 T MCT oil. I was testing to see if it affected my performance in the gym and digestion (since I drink coffee with added fats to help ease IBS issues). No stomach issues and to early to tell if more or less oil is helpful in the gym. Before I went to the gym I had a banana for pre-workout fuel.
Today was deadlifts/back/biceps day and it felt great to get back in the gym after a couple days off. Nothing like getting your endorphins amped up before heading to work on a Monday 😉 Once I got back and showered, I had breakfast. Today’s breakfast was made as part of food prep on Sunday, carrot cake overnight oats. Still perfecting this recipe! I added a few sliced of banana and coconut strips on top.
Since it was a Monday, extra caffeine was necessary. I had a matcha latte when I got to work, made with almond milk and a small drizzle of honey.
Mid-morning snackage included Boar’s head deli meat roll-up and a cinnamon maca energy bite (recipe perfected, I’ll add to the blog soon!) I also had a homemade cherry ginger kombucha at some point, too.
Lunch…I apologize looks disgusting but I promise it was delish! I feel like my lunch never looks pretty, but just keeping it real with you. I usually just throw a bunch of food in a big bowl, because eating big bowls of food is my fav. Today’s big bowl of food included green beans, kale, roasted sweet potato wedges (with a little bit of EVOO), grilled chicken with TJ’s coffee garlic rub (sweet potato and chicken were food prepped on Sunday), and lots of mustard. I weirdly really love mustard…Lunch also included 2 mandarin oranges and a bite of candied ginger. Perfect way to end a meal, I must say!
I was pretty full from lunch, so didn’t need my usual afternoon snack. I started getting hungry right before leaving work, and I knew I was going to come home and cook dinner soon, so I just snacked on some carrots. I am trying to eat dinner earlier, and I will discuss why in a post going up tomorrow or Friday!
And then I snacked on (not pictured) beets while cooking. Easy way to sneak in some extra veggies is to snack on them!
Dinner was a pretty typical dinner around here, egg hash! Cooked with leftover potatoes and zucchini (from dinner the night before), green beans, carrots, spinach, TJ’s jalapeno chicken sausage, and 1 egg + 1 egg white. Topped with hot sauce, naturally. I ate almost all that you see here. #alltheveggies
I was craving a smoothie bowl (it had been a few days since I had one because I was out of town this past weekend), so for dessert Nick and I split a big acai berry bowl. Made with the usual suspects, with added Greek yogurt this time. Topped with a sprinkle of cacao nibs.
And that was it! Lots of delicious eats on this day full of all my favorite foods. Perfect way to start the week, especially after being out of town the past weekend and going out of town again this weekend!
