What I Ate Wednesday is a popular link-up between food bloggers, started by Jenn at Peas and Crayons, to showcase what they typically eat in a day.
Its that time again, another round of WIAW! Today’s post is from Tuesday of last week.
This was actually a rest day for me, but the morning was still an early morning because that’s when I work the best! I woke up at 5am and immediately rehydrated with lots of water and had a shot of diluted apple cider vinegar. After this, I had some Jacked Up Java. I usually drink a matcha latte on the days I do not workout in the morning, but today I just wanted a big mug of coffee. So I went with it 🙂
Breakfast this day (and all of last week due to food prep) was banana peanut butter overnight oatmeal topped with all the toppings: cinnamon Puffins, homemade cherry jam, cacao nibs, and blueberries. YUM.
Overnight oatmeal was made with: 1/3 cup rolled oats, 1/2 mashed banana, 1/2 cup plain Greek yogurt, 1/2 T chia seeds, 1/4 cup almond milk, dash of cinnamon and 2 T PB2.

This kept me full until lunchtime. Lunch was an AMAZING Greek farro and chicken salad I also food prepped on Sunday. Made with farro, shredded roasted chicken, spinach, parsley, green beans, cherry tomatoes, lemon juice, olive oil and olives, feta and balsamic vinegar. Loved it! Should I make this a recipe for the blog?! (I am thinking so!)
I also had a cherry ginger (homemade) kombucha and energy bite following lunch. Didn’t end up needing the pear I had packed.
For a snack today, I had some homemade trail mix made with popcorn, cinnamon Puffins, peanuts, cacao nibs and dark chocolate covered coffee beans. I had a few handfuls like this one!
Dinner was pretty early because the trail mix didn’t hold me over long. Blackened chicken (using Trader Joes coffee and garlic rub), sweet potato wedges with curry ketchup and sauteed Brussels sprouts and broccoli in turmeric, curry and coconut oil. Served with the last of my muhammara from Trader Joes. This was so good that I made it all again for dinner on Saturday!
I was still a little hungry around 7pm, so I made a smoothie (typical) with mixed berries, raspberry Siggi’s kefir (SO GOOD), PB2 and almond milk. Topped with Puffins.
What a delicious day of eats! Everything this day was SO good!
