Well, good morning!
Currently in week ONE of being self employed…and I have to admit….I LOVE IT. I’m learning/playing around with how I want to structure my days, so I am sure you’ll notice that over the coming week’s What I Ate Wednesday posts.
My schedule/timeline for the day is SO different now that I’m not having to rush out of the door in the morning and not working two jobs. Don’t get me wrong, I am working all day- but it is nice to not have to do it at 5am before I leave for work and 6pm when I get home. Its really, really nice actually. While our business is in high gear as we are about to launch multiple projects (including a podcast!!!), it’s still a world of difference in my stress levels. I feel like I can breathe again!
So let’s look at yesterday’s eats…
I slept in (well until 6am!) and immediately started my morning routine with warm lemon water and maybe thirty minutes later was followed by Jacked Up Java. I continued my morning routine, planned out the work I needed to do for the day, and then had a business meeting phone call with Meg.
After the phone meeting, I enjoyed breakfast of leftovers from the night before. Mashed potatoes whipped with heavy cream, bacon Brussels sprouts, a couples slices of peppered bacon (from Niman Ranch, so freakin’ good) and a lamb chop.
I took Porter on a walk after breakfast and then got to work for the day! After a couple hours of working, I took a break to do BUTI yoga (in my garage lol), shower, eat lunch and then I headed to our co-working space for the afternoon.
Lunch was a big salad with roast beef and Primal Kitchens Ceasar dressing…yes it’s expensive but y’all its SO GOOD. I’m too lazy lately to make my own salad dressing so I’ll happily pay more for ingredients I want. Oh, and you know I had some (unpictured) chocolate too!
In the afternoon I sipped on turmeric milk with added collagen and MCT oil and drank it cold because it is SO HOT here in Florida.
Meg is awesome and brought a bunch of snacks per my request to our meeting, ’cause I forgot to bring food with me 🙂 I had a few strawberries and munched on almonds while we planned our podcast (eekkkk!)
Once I got home from working around 6:30pm, I finished cooking dinner and then devoured it! Asian style meatballs with leftover mashed potatoes and carrots from the night before, plus sauteed green beans. After this pic I added (Chosen Foods brand) Chipotle Ranch dressing (’cause I’m all about that sauce). Use this recipe for Asian burgers and form into meatballs. Took all of 15 minutes to make!
I would typically have dessert but I wasn’t much in the mood yesterday for one.
