Happy Wednesday! I hope you are having a great week so far- I know I am! I had a wonderful weekend this past weekend reuniting with some of my amazing friends from high school and their partners. We have taken this trip to St. Augustine, FL annually for six years and I always leave filling like my soul is on fire. I also made a true effort to not check my phone for emails and social media for an entire four days, and that break felt amazing!
Today’s eats are from yesterday, a day of weird eats since we didn’t have much food in the house after the vacation!
After doing some stretching, meditation and walking my dog- I ate breakfast. Today was the same yogurt bowl I have been having lately, except with Maple Hill vanilla yogurt. I also had it with a small amount of almond butter (we had barely any left in the jar- bummer!), ground flax meal, bee powered, sprouted pumpkin seeds and cacao nibs.
It wasn’t quite as filling without all the nut butter so I had a second half caff of Jacked Up Java with about half the amount of ingredients I usually add.
Lunch was all that was left in the fridge…sauteed kale, eggs, cheese and 2 slices of TJ’s gluten free toast with butter.
And of course I finished the meal with a bite of dark chocolate! Plus a couple bites of candied ginger.
I’m not much of a snacker these days but today I needed one…and y’all this was so good! Spiced coconut flakes and dried mango with natural peanut butter on top. Yum 🙂
Dinner tonight was wild rice cooked in bone broth, bacon wrapped chicken thighs and roasted broccoli. I ate almost all that is pictured here.
And for dessert I had a slice of Simple Mills banana bread, so good!
