Good morning and happy hump day! You guys really loved seeing what I ate on the weekend, so I am happy to share more!
Today’s post is sharing what I ate this past Sunday and Monday…alright let’s do this!
Sunday was SUCH A FUN DAY. Since I’m in starting business mode, I usually work nonstop on the weekends as that’s my main time to work on it. BUT I’ve promised myself every few weeks I will take an entire day off from working as my soul really needs those breaks. So that’s what I did this past Sunday! I planned a day date with my girlfriend Sarah, and we drank and ate and had lots of amazing conversations and then went to the Dali Museum to see the Frida Kahlo exhibit. It was perfection 🙂
I started Sunday off as I always start my mornings, with 4 cups of warm lemon water. About thirty minutes after waking up, I enjoyed a cup of Jacked Up Java, shortly followed by another one made with half caff and only a few of my usual ingredients I put in it (I think I only put a squirt of MCT, scoop of collagen and splash of heavy cream).
My girlfriend and I met up at 11am and went to brunch! Except we had to wait over an hour to eat (for two people!) so we went to another restaurant while waiting and enjoyed a Bloody Mary while catching up on life.
Once we were seated for brunch, we had another round of Bloody Mary’s and then devoured our brunch at the Mill in St Pete. I got the special, and I cannot even remember what all it had in it. It was kind of like a pile of nachos…layered with rice, pulled pork, fried egg, guacamole, cheese and a bunch of other stuff. I didn’t eat really any of the tortilla chips since they hurt my stomach last weekend, and it was super filling without it. I ate a good portion of what is pictured here!
After brunch, we walked around downtown St Pete and slowly made our way to the Dali museum. Isn’t St Pete beautiful?! I love it so much 🙂
If you ever come to town, you have to go to the Dali Museum. It is so well done, and the Frida Kahlo exhibit was AMAZING. I am so inspired and want to learn so much more about Frida!
After we were done at the exhibit, we walked to our friends apartment, and then from there went to meet more friends and my husband (and pup!) at a local brewery. I had two fermented ciders while there. I am a HUGE craft beer lover, but I am in the middle of 6 months with no gluten while I heal my gut, so I went for the cider instead. My hope/plan is once I am 100% healed (and I am certain I am getting there as I follow my own gut healing protocol) I can have the occasional craft beer, pizza, etc without the adverse reaction I had started to have from consuming it. With digestion issues its not always 100% necessary to eliminate gluten (although many do benefit especially with diagnoses like Candida, Chrons, leaky gut, etc), since I also have autoimmune issues I feel it is best for me to 100% avoid it for now. After a couple ciders, Nick and I chose to go home for dinner instead of eating out since we had already spent a good bit of money that weekend. Luckily, I had cooked a TON the day before as I was taking pictures for recipes for the month, so all we had to do was heat up the leftovers when we got home. I enjoyed an Asian burger with sriracha mayonnaise (a lot of it!) with spinach, roasted vegetables, more sriracha, pickled ginger and kimchi. Sorry I didn’t snap a pic!
I shortly afterwards followed up (as I was still slightly hungry) with an unpictured mug of a few dollops of homemade yogurt, a couple pieces of my homemade low sugar paleo fudge (this stuff is unreal- cannot wait to share!), peanut butter, cinnamon, cacao nibs and honey. Perfect way to end the day 🙂
Alright onto Monday!
Monday again started off with my morning routine, including 4 cups of warm lemon water. Something I am doing it to improve my sleep, and follow my circadian rhythm better is to wait to have coffee until later. I was drinking it at 4:30-4:45am, which I feel was causing me to get out of bed simply to reach for caffeine and disrupting my body’s natural circadian rhythm. While I am still getting used to waiting until 6:30-7am to drink it, I am having so much more energy throughout the entire day by doing this.
So before working out on Monday, I only had the lemon water. At the gym, I had a very low intensity leg day workout. My body is still recovering from all the stress of healing my bacterial and yeast overgrowth and the positive stress of starting a business. So I’ve been very cautious about adding more stress to my body, so workouts for the past month have been minimal and low intensity!
When I got back from the gym, I had a cup of Jacked Up Java. And then a cup of bone broth (not pictured).
Around 11am, I had a really big brunch/lunch. First up was some unpictured raw dairy cheddar cheese. And then I had a big salad made with raw spinach, roasted veggies and potatoes, shredded chicken legs, sauerkraut, olive oil, mustard and sprouted pumpkin seeds.
I’ve been storing my nuts in these Infinity Jars lately. They were sent to me to try and I’ve been very impressed! It helps to prevent them for going rancid quickly which is really important with all our foods, but especially certain foods like nuts. (I was not paid to share that just sharing a product I was sent for free to try!)
With lunch, I also had some homemade yogurt mixed with Siggi’s (both plain and unflavored) with cinnamon, nut butter and cacao nibs. And some of my favorite 88% dark chocolate.
And that kept me full until it was time to cook dinner! While I was cooking dinner I sipped on some turmeric milk.
For dinner I made a recipe test success, salmon cakes pan fried in duck fat with roasted potatoes and sauteed zucchini (both cooked in Epic duck fat too).
After dinner, I had a couple nugget pieces of my homemade low sugar fudge. A recipe I CANNOT WAIT to share with you guys!
