It’s an extra happy Wednesday because Nick and I are currently driving with the pup to the Carolina’s to spend the holiday with our family! It’s been a year since we’ve been to where we are both grew up in Salisbury, NC. Nick’s family all still lives there, so it will be great seeing them and then the later half of the week we will be going to Clemson to spend time with my family and to go to the Clemson vs USC football game….Go Tigers!
I hope you have a wonderful Thanksgiving and PLEASE enjoy yourself! The holidays are MEANT to be enjoyed…food included! No need to skip meals leading up to Thanksgiving, feel guilty after enjoying the Thanksgiving meal and definitely no need to “give up” afterwards. I am personally looking forward to eating all the turkey and gravy, lots of cranberry sauce, and lots of pumpkin pie! Today’s WIAW post is from this past Saturday. If you read the post from that day, I was presenting a “Taste Cart” at our local farmer’s market featuring roselle sauce.
I started the day off as I always do, a quart of warm water and a shot of diluted apple cider vinegar. Followed by Jacked Up Java.
I was hungry but wasn’t in the mood for much food since I was feeling nervous about the cooking demo…so I made a yogurt bowl with about 1/2 cup whole milk plain Greek yogurt, lots of peanut butter, cacao nibs, hemp seeds, pumpkin seeds, local raw honey and pomegranate arils. Looks delish doesn’t it? 😉
After enjoying the yogurt bowl I made a cup of turmeric milk with added collagen and MCT coconut oil. I wanted some anti-inflammatory foods in my body because of the nerves/stress, but only ended up drinking about half of it before we left for the market.
And OF COURSE once I got to the market and got into the swing of things, I was totally in the zone and was enjoying the cooking demo so much! I always get nervous the hour or so before an event. And then once the event starts and I start talking about food (my passion!) all my nerves melt away 🙂
The event went great and I ended up running out of samples by about 12:30pm, so we packed up and then went to enjoy lunch. Nick and I went to a local taco joint where I got the salad with shrimp, queso fresco, guacamole and pumpkin seeds. And then I added a bunch of hot sauce. SO good!
When I got home I wanted something sweet, so I enjoyed a bite of some freezer fudge I had made a week or so ago and added some dark chocolate on top. (Sorry, no pic.)
And then I took a nap. And then got restless because I can only relax for so long. So I made some paleo peppermint no bake brownies that turned out AMAZING. I, of course, took a couple bites to test the recipe. Love it when recipes are successful after the first attempt!
Once I was finally ready to relax I sat down a had big glass of wine while Nick and I watched a couple episodes of Narcos. For dinner, I had leftovers from the night before. Spaghetti squash (grass fed) beef pad thai topped with pickled ginger, kimchi and sriracha. The recipe is almost ready for the blog!
And dessert was a coconut flour mug cake topped with the last of my roselle sauce, peanut butter, pomegranate arils, honey and cinnamon! Plus the rest of my turmeric milk from earlier in the day.
And I went to bed superrrr early on a Saturday night! Yup. I’m getting old. And I love it.
