Happy Wednesday! Today’s eats are from this past Sunday…let’s get to it!
I slept in (until 7am!) and as soon as I woke up I had my usual quart of warm water and shot of diluted apple cider vinegar. Afterwards I had a small pre-workout breakfast of my protein peanut butter cup oatmeal.
I made this oatmeal with make ahead steel cut oats, cacao powder, PB2, honey, 85% dark chocolate and topped with cacao nibs and peanut butter. I didn’t eat all that was pictured, I was comfortably full with less.
Nick and I then went to the gym and did deadlift + back + biceps. We usually do this on Friday’s, but I was very sore Friday morning so I listened to my body and rested instead.
When we got back from the gym, I had a second breakfast of sweet potato toast with smoked paprika almond butter and apple chicken sausage. Plus a couple stuffed dates. It was so YUMMY.
We wanted to take Porter to the beach, but unfortunately there was red tide so we were unable to go. Instead, we took the pup to the dog park and then walked around downtown St. Pete. Nick stopped for lunch but I wasn’t hungry (second breakfast was basically a really early lunch) so I just had this DELISH juice! I got extra turmeric and ginger in it 🙂
When we got back I was ready for a small lunch, so I enjoyed some rice topped with saukraut, 1/2 small avocado, Sabra spread and a fried egg.
I also had lotssssss of bites during my food prep. So many goodies to enjoy 🙂
Dinner was blackened miso marinated chicken, coconut lime rice and roasted Brussels sprouts and carrots in coconut oil. The rice is buried underneath all the veggies. I ended up leaving some of the vegetables on my plate.
I ended the night was a calming Magnesium drink, turmeric milk and a few paleo pumpkin bars. I cut them super small so I probably had one normal portion. DEFINITELY make these.
