Well, hello there!
You guys…I have been so MIA on my blog, social media, like everywhere. I love you all to pieces, but moving is taking a priority to, well, everything right now. Nick and I moved from our rental house to a temporary apartment earlier this month and two weekends ago we closed (wohoo!) and moved into our house. As of today (writing this Tuesday night) we are back in another temporary apartment while our house gets fumigated. At least this time its only for two days! On top of that, we have had some flooding and sewer issues from the hurricane…so life lately has been a wee bit hectic and seriously disorganized. But it’s also amazing and so exciting to be a homeowner!
Today’s eats are from two Monday’s ago…because, well, I ran out of time to post this last week and I ran out of time to snap pictures of my daily eats this week!
It started off with the usual, a quart of warm water with lemon, a shot of diluted apple cider vinegar and a big ol’ cup of Jacked Up Java (this was all around 5am).
Around 6:30am, I enjoyed a smoothie bowl for breakfast. Filled with frozen banana, frozen kale, frozen zucchini, Greek yogurt, PB2, high protein almond flour and kefir. Topped with the usual suspects- Puffins, cacao nibs and peanut butter.
A cold brew also, most definitely happened. It was necessary.
I was pretty hungry all day, so I listened and ate as my body told me to. We had a very active weekend full of moving and cleaning, so I was not surprised when my hunger levels were a bit stronger on Monday. Around 9:30am I was already pretty hungry, so I enjoyed my mid-morning snack/second breakfast/whatever you want to call it. A mozzarella stick wrapped in prosciutto and a nut butter stuffed date.
I was still SO hungry in the morning, so I listened and had my lunch reallyyyyy early. Like a little before 11am. Today’s lunch (and all my eats for this day) was a random assortment of all the food left in the house. It included spinach, tomatoes, deli meat, hardboiled egg, chickpea curry salad (from Rollin’ Oats, a local health food store) all topped with apple cider vinegar, olive oil and mustard. I also had an un-pictured stuff date for dessert. (Side note: I apologize for the terrible pic below…some times real life eats are not very pretty :))
It’s funny how we often want to control our hunger levels and dictate how and when we should eat. But your body is wicked smart and not listening to it well only make you too hungry later on and overeat as a result. Trust me, I’ve been there. My early lunch held me over just as well as when I eat lunch around 12-1pm. By about 3:30pm, my stomach started rumbling again and I was ready for a snack. Today I had a Siggi’s blueberry yogurt and a hardboiled egg with hummus on top. Totally recommend toppings on your egg, it was epic.
After work, I had to run to the grocery store to get some frozen meals/convenient food items for the week. The money savor in me cannot justify us eating out for every meal, but I just did not have the time for food prep this weekend. So I went to Trader Joe’s and got a bunch of pre-made meals and snacks. It was more expensive than our usual grocery bill, but still so much more cost efficient than eating out!
On the way to go pack up our temporary apartment, I had a banana.
Once we finally got home and finished unpacking everything in our cars from the apartment and unpacking our storage pod, I sat down to relax and enjoy dinner (around 7:30pm). Dinner was a TJ’s frozen meal, butter chicken with rice, which was actually REALLY good. I added green beans and maybe a tablespoon or two of the curry chicken salad I had earlier for lunch.
And that’s it! As usual, I drank lots of water this day…I also had a kombucha at some point…
