Today’s What I ate Wednesday post is from this past Sunday. I thought it would be fun to share a day of eating from this weekend to see if its that different from my week day eating habits.
I discussed my morning in this post, but I slept in and enjoyed a relaxing morning. I chugged lots of water and had my morning shot of apple cider vinegar diluted with water. Afterwards, I sipped on a matcha latte, made with coconut and almond milk, and liquid stevia.
I made these pancakes for breakfast, and added cinnamon, vanilla extract and 85% dark chocolate. Topped with the usual suspects, half a banana, cacao nibs and natural peanut butter. Excuse the lack of photography skills in the picture…
I was in the zone working on posts for the week, and wanted an extra caffeine boost, so made a delicious peppermint mocha drink with half a cup of coffee, cacao powder and peppermint oil. I HAVE to add it to the blog soon, it is so good!
For lunch, I had leftovers from the night before. Mustard thyme panko chicken with pecans (recipe still needs some tweaking) with an amazing Brussels sprouts recipe (coming to the blog tomorrow!) over a bed of spinach with an avocado toast with egg on the side. I also had an unpictured homemade kombucha with lunch.
After working on the blog, taking pictures for the recipe on Thursday, and food prepping, I got in a quick circuit workout at the house. Then Nick and I took the pup to the doggy beach, the weather is so amazing right now here in Florida!
Once we got back from the beach, the hubby and I decided to eat dinner pretty early, but I was pretty hungry so I tasted the muffins I prepped for the week earlier (I ate about a 1/4 of the muffin). It was a blueberry beet muffin (by Nutrition Sripped). Y’all these are so good, definitely recommend making!
Dinner was freshly caught flounder and trout, thanks to Nick. I roasted the fish in the oven and flavored it with Kerrygold grass fed butter, smoked paprika, TJ’s 21 seasoning salute, red pepper flakes, salt and pepper. I ate the fish with spaghetti squash and again, the Brussels sprouts I made earlier for the recipe tomorrow. I am guessing this is the life of a food blogger, eating leftover recipes?! Sounds good to me 🙂
I was still pretty hungry, so an hour or so later I made some banana nice cream (with bananas, peanut butter, PB2, cocoa, grass fed whey chocolate protein powder) with toppings.
So what did you think? Not too different from the week day? Some weekends are very indulgent, and some are just my normal eating- honestly it just depends what is going on!
