I’m back for another round of What I Ate Wednesday! What did you think of Nick’s post last week? I think it is SO interesting to see how we all eat different, have different nutritional needs and I love showing how my husband eats in comparison to how I eat. I hope you enjoyed it, too!
Now on to my eats from this past Thursday…the day we moved! I am not sure what inspired me to take pictures on the day we moved…but it is interesting to see how intuitive eating guided me on this day. I (obviously) chose not to work out this day (or days after) because we were moving and Nick and I personally chose to move everything ourselves. I am not going to lie, I was impressed I was able to EASILY move all of our furniture (including a washer and dryer!) It is one of the many reasons I love strength training, it makes so many other areas of my life easier!
The day started off with the usual pint of water (no lemon because I was all out) and a shot of diluted apple cider vinegar. Followed by my Jacked Up Java recipe. And then a smoothie bowl made with blueberries, banana, spinach, zucchini, Greek yogurt and almond milk, enjoyed in empty Greek yogurt package. I topped this with kiwi, mango, Paleo Passions granola (that I was given to try the product), cacao nibs and peanut butter. The granola tastes good, but it was missing a crunch factor.
Hours later, I needed a snack after all the packing/climbing stairs/cleaning, a couple energy bites did the trick.
And an hour or so later I got super hungry, so I had my lunch. A sandwich made with multi-grain ciabatta bread, kiwi marinated chicken (recipe will be on the blog this week!), roasted broccoli/peppers/carrots and dijon mustard. Y’all…this was SO good! So many different flavors and textures going on. I am so excited about the chicken recipe because the meat is juicy and tender. And putting roasted veggies in my sandwich?! Loved it!
For a sweet treat and the NEED for more energy, I had a few dark chocolate espresso beans…and then went to my favorite coffee shop (which is now within walking distance of where we live!) and got a “Chai Town”. Chai tea + cold brew + soy milk. It was tasty, but I only drank about a 1/3 of what is pictured, I couldn’t handle all the caffeine! I saved it and drank the rest the next day(s).
After continuing to pack and clean our old house I needed a snack a couple hours after lunch, so I had a RX bar, chocolate mint flavored. Love these bars, especially if I can find them on sale. Maybe an hour later I had an un-pictured banana. I was pretty hungry throughout packing and reaching for fuel constantly. I ended up being super glad I had NOT packed some of our food, Nick and I ended up not eating dinner until 8pm (which is late for me considering I usually go to bed at 9pm!)
Dinner was take out from Fresh Kitchen. I had been dying to try it and made it our first choice for our first night officially living in St Pete. It is like a local version of Chipotle…but ten times better! So many delicious options, I definitely had a hard time deciding what to get. I ultimately chose sweet potato noodles + kale slaw + roasted brussels sprouts + chimmichurri cauliflower + steak + citrus lime chicken + feta. Plus cucumber jalapeno sauce. Yes, it was a super random concoction of flavors. But so good. I will definitely be back again (and will probably plan what to get a little better next time :))
Edited to add: I ate almost all that is pictured, I saved the chicken and some of the cauliflower for a snack the next day.
