Hello my fellow foodies! Ready for a second round of What I Ate Wednesday (WIAW)? Check this post for more ideas on how I eat on a daily basis.
This day of delicious eats is from last Wednesday. On most Wednesday’s, Nick and I go to the gym together in the morning before work to lift weights. I woke up at 4:45am (I know, crazy right? I’m such a weirdo and absolutely love the mornings, so this doesn’t even bother me) and immediately chugged lots of water to re-hydrate and started the day of with a shot of apple cider vinegar + lemon juice (new addition to this shot, I am testing it out) diluted with water.
After this, I made a big ol’ cup of my version of Nutrition Stripped’s coffee, elevated. I make mine with a cup of brewed, dark roast coffee blended with a tablespoon of coconut MCT oil, a heaping tablespoon of coconut cream, 1/2 teaspoon maca powder, 3-4 drops liquid stevia and a dash of nutmeg. Deeeeelicious. One of the reasons I started drinking coffee this way was because I was able to drink it without major stomach pains. I used to drink black coffee on an empty stomach and then paid later with serious stomach pain/bloating/other issues. I stopped drinking coffee for awhile, but I love it SO much, and while I don’t necessarily drink coffee everyday anymore (or at least I try not to), I love that this allows me to drink it again (without the tummy troubles). The fats in the coffee allow the caffeine to be more slowly absorbed, which is what I attribute to why I can drink it now without stomach pain.
This was followed with an un-pictured half a banana that I had for pre-workout fuel. Today was leg day. Which means lots and lots of squats, lunges, and glute workouts. Enjoy a picture of us pre-workout too early in the morning (Nick was thrilled I was making him take a selfie at 5:30am ;))
Once we got back from the gym, I showered and started making breakfast around 6:30am. Today’s breakfast was oatmeal (I promise I don’t eat oatmeal everyday, but I have been on a serious kick lately). Made with 1/2 cup of make ahead steel cut oats, 1/2 scoop of grass fed whey protein powder, 2 T PB2, ( I usually add 1 egg white but I was all out of eggs, so sad). Topped with peanut butter, cacao nibs, 1/2 cara cara orange and after I took this picture lots and lots of cinnamon (because I love it, and cinnamon may also lower blood sugars when consumed with carbohydates).
Around 11:30am I ate lunch, tuna salad made with Trader Joe’s wild caught tuna + avocado + TJ’s sweet and spicy mustard + sea salt + red pepper flakes + apple cider vinegar (probiotics with food help aid digestion). I wish I would’ve made this with dijon mustard, but I didn’t have any on hand. Other than that, this was delish! I enjoyed the tuna salad with spinach, cherry tomatoes, hemp seeds and TJ’s roasted plantain chips (I feel like all my food comes from Trader Joes?! #traderjoesfanatic). Plus an energy bite (made with dates + PB + raisins + peanuts + flax seed + oats and a dash of pure maple syrup, cinnamon and vanilla extract). Nick and I both agreed these are a recipe winner, I just have to figure out now how I made them so I can add the recipe to the blog!
And per usual, by about 3pm I was ready for a snack. Today’s snackage was a brown rice cake topped with a hardboiled egg, plus another energy bite. The foodie in me wished this would’ve been a fried egg, but I can’t pack that in my lunchbox…
After work I went and ran errands, including a trip to Cotsco for some essentials (yay for more eggs and peanut butter). Once I got home and played with our crazy animals for a little bit, Nick and I sat down to enjoy dinner around 6:30pm. I made PaleOMG’s Almost 5 Ingredient Pizza Spaghetti Casserole, but added in some extra flavor/nutrients. Made with TJ’s spicy Italian chicken sausage (see there’s a TJ item again!), more marinara sauce, added parsley and spinach, some extra spices, and topped with olives. This was SO good. Definitely plan on making it again!
As always, I finished the night off with a sweet treat. A protein coconut flour mug cake topped with a little bit of sweet potato, a little bit of peanut butter and one of my dark chocolate peanut butter cups. I know it sounds weird, but sweet potato + peanut butter + dark chocolate are such an amazing combination. Promise me you’ll try it?
