Description of Recipe Redux : As the first and only recipe challenge founded by registered dietitians,The Recipe ReDux is focused on taking delicious dishes, keeping them delicious, but making them better for you. Dietitians Regan Jones (ofReganMillerJones, Inc.), Serena Ball and Deanna Segrave-Daly (both of Teaspoon Communications) founded the group on the belief that healthier eating should always taste delicious. As the Latin term “redux” means to revisit or reinvent, we are reinventing the idea of healthy eating with a taste-first approach. We aim to inspire the food lover in every healthy eater and inspire the healthy eater in every food lover.
Today is my first official Recipe Redux! The recipe redux challenge is celebrating their birthday, which is wonderful timing as my birthday is tomorrow as well. The theme of this month’s challenge is to showcase another reduxer and either make one of their recipes or make a version inspired by their recipe.
There are so many bloggers that participate in Recipe Redux that I love and follow, but today I wanted to showcase a blogger who I have been following for years! Kelli is the blogger and dietitian behind Hungry Hobby, and I chose her recipe for Walnut Pesto Turkey Burgers. When I saw this recipe I thought the burgers sounded absolutely delicious (spoiler alert: they were!)
I also chose to do a redux challenge using Kelli’s recipe as she is a RD that I admire. I am sure she has no idea who I am, but I have been following her blog since the first year or so she started it! We have similar backgrounds, both starting our careers in WIC. I really admire that she worked full time the first couple years of her blog, first at WIC and then at Lifetime Fitness. While at Lifetime Fitness, she also became a personal trainer- another thing I would love to do someday. She now runs her blog and private practice full time, and it gives me hope and inspiration that I can one day as well. While I have not yet started my private practice those are my ultimate goals with this blog. Gotta dream big to get what you want in life, right?! I love following dietitian bloggers that are doing what I envision for my own future, it gives me inspiration and hope that one day I can as well. Thanks for the inspiration, Kelli!

These walnut pesto turkey burgers are delicious and the perfect weekday meal or part of your food prep. Her recipe calls for 8, but I suppose I like my burgers extra big because I made mine into 6 🙂
They have a slightly nutty taste, with just a hint of basil and even though these are made with extra learn (99%) ground turkey, they remain extremely juicy! The first night I ate these I forgot the buns at the store (no surprise here), so I ate a burger on spinach with a roasted red pepper, pickled red onions, spinach and roasted sweet potato wedges. That exact meal was my lunch for the next two days. And the last day I enjoyed a burger on a stone ground whole wheat bun with roasted red pepper and mustard. Delish!
