The perfect light salad for a summer meal. Full of nutrition and flavor, this spinach strawberry salad with sweet and tangy yogurt dressing will not disappoint!
I have been making this salad for years now, its a favorite of mine- especially in the summertime! I love how simple it is to make, and tastes so different from your standard salad. I discuss this often with my clients and it is part of my food philosophy here on Diehard Foodie, but I believe eating DELICIOUS food is integral to making healthy eating part of your everyday life. If you eat the same bland, boring salad, raw carrots, etc. everyday you are going to grow so tired of eating nourishing food. That’s why I aim to provide recipes each week as well as discuss intuitive eating and eating without food rules (which is one of the reasons I do daily eats posts).
This spinach and strawberry salad is a sweeter salad compared to traditional salads, and I think it really stands apart from other salads because of the yogurt dressing. I use yogurt all the time in replacement of oils and mayonnaise. While healthy fats and having enough fats in our diet is SO important, yogurt is an easy way to still get the creamy factor without TOO much added fats. I actually made this with whole milk Greek yogurt, so it still contained a healthy dose of fats (and made the yogurt even more creamy!). Feel free to use fat free, low fat or full fat yogurt, I have made it with each of these and it always taste amazing! I love to pair this salad with a heavier fat based protein like my coconut butter salmon so that I am getting enough of each macronutrient at mealtime.
I use to make the yogurt dressing with orange zest and juice, but recently switched to lemon zest and juice. Honestly, both ways are delicious! If you want a sweeter dressing, I would use the orange zest/juice, and if you would like a more tangy dressing, use the lemon zest/juice.
- 4 cups fresh spinach
- 1 cup strawberries, sliced
- 1 cup celery, chopped
- ⅔ cup pickled onions*
- ½ cup plain Greek yogurt (fat amount depending on preference, I used Siggi's whole milk Greek yogurt)
- 1 Tablespoon honey
- Dash of sea salt
- Zest of 1 lemon
- Juice of 1 lemon
- First, make the dressing. In a small bowl mix Greek yogurt, honey, zest and juice of lemon in a bowl and mix to combine. Set aside.
- In a large salad bowl add the spinach, celery, strawberries and pickled onions. Pour the salad dressing over the vegetables and mix to combine!
- If not eating immediately, wait to add dressing until being served.
Yogurt salad dressing can also be made using orange zest and orange juice.
