Coconut lime rice is an easy and delicious recipe. Creative, yet simple ingredients make this a perfect weeknight side dish. This rice is vegan, dairy free and gluten free.

How was your weekend? Mine was very productive, yet relaxing. On Friday I spent most of the day at a functional medicine doctor’s office finally getting down to the root cause of some of the new digestive issues I have been experiencing. I’m not quite yet ready to share what’s been going on, but I am very happy to have some answers and promise I will share soon!
Besides that, I spent most of the weekend working and relaxing. I went to bed insanely early and got caught up on sleep thankfully, because this week is going to be BUSY. Hopefully our practice will be officially opening our doors this week (!!!), I’m doing a grocery store tour for USF in St Pete on Wednesday night and on Thursday night Meg and I will be back at Nature’s Food Patch doing a cooking demonstration.
I have promised myself I am going to maintain self care during this week of extra work, because its important to me to practice what I preach. I will still be doing my morning and nighttime routines daily and on Sunday I plan on spending the day at the beach.
I’ve been talking to my sister about this a lot lately, but I tend to work hard for weeks and then I seem to crash and burn where I cannot get off the couch for a couple days. I am trying to be better about planning off days from working to avoid this crash and burning effect. Personally, nothing is more rejuvenating to me then going to the beach. I feel so fortunate that I live fifteen minutes away from beautiful beaches and the weather is amazing year round. Nick and I use to take advantage of it all the time, but because most of my working on my business is on the weekends, we have been way less often. I am determined to change that!
Speaking of self care, nothing is better for your self care than eating foods that make you feel beauitful, radiant and energized. Today’s recipe for coconut lime rice is one I make at home ALL the time. I always have rice, coconut milk and lime in my pantry so anytime we are having an Asian themed meal (which is a lot because I LOVE Asian flavors) I make this as our side dish. I personally have been using white rice lately to be as easy on my digestion while its healing, but brown rice is a great option, too!
- 1 cup uncooked rice
- 1½ cup water
- 1 Tablespoon coconut oil
- 1 cup coconut milk
- Zest and juice of 1 lime
- Salt to taste
- Add water and coconut oil in a pot on medium high heat. Bring to a boil and then add rice.
- Turn heat down to low, cover and simmer for 15 minutes.
- Take pot off the heat, add the coconut milk, zest and juice from the lime, and salt and cover and allow to sit for 10 minutes to steam.
